싱가포르 최고의 프렌치 파인다이닝으로 꼽히는 레자미(Les Amis)에서 8년째 일하고 있는 김다솔 헤드 셰프. 세바스티앙 레피누아(Sebastien Lepinoy) 총괄 셰프와 함께 신메뉴 개발에 주력한다. 레자미는 1994년 문을 연 파인다이닝이다. 명망 있는 레스토랑인 만큼 이곳에서 신메뉴를 개발한다는 것은 의미가 크다. 지금까지 쌓아온 완벽에 가까운 레시피의 성장과 변화를 보여줘야 하니까. “8년이 순식간에 지나갔어요. 지난 시간은 성장의 기록이기도 하죠. 2016년 싱가포르에 미쉐린 가이드가 처음 도입되었을 때 2스타를 받았어요. 팀원 모두 기뻐했지만 더 높은 꿈을 향해 달려가는 중이죠. 무엇을 위해서라기보다 당연한 거죠. 그렇게 3년 뒤, 모든 셰프가 꿈꾸는 미쉐린 3스타를 받았어요. 주방에서 매일 일하다 보면 때론 지쳐요. 하지만 반복되는 일상에도 변화와 진전은 일어나죠. 레스토랑도, 삶도 비슷해요.”

김다솔 셰프에게 싱가포르의 매력은 1년 내내 동서양의 다양한 문화가 뜨거운 열기로 뒤섞인다는 것. 음식 문화도 마찬가지다. 다양한 국가의 먹거리가 있는 호커 센터(음식을 만들어 파는 노점과 상점을 모은 야외 복합 시설)부터 파인다이닝까지 골고루 존재하는 이곳엔 한계도 편견도 없다. 이 도시가 그녀에게 준 최고의 가르침은 세계 최고의 식재료가 가장 좋은 음식을 만든다는 것. “셰프의 중요한 업무 중 하나는 세계 최상의 식재료를 찾아내는 거죠. 우리 레스토랑의 철학이기도 해요. 재료 생산자나 공급업체와의 커뮤니케이션도 요리의 일부죠. 수입산보다 국산이 무조건 좋다는 편견이 있었어요. 세계 각국에서 이어지는 고도의 물류 시스템 덕분에 수입 식재료가 현지 식재료 이상으로 신선하고 훌륭하기도 하죠. 재미있는 점은 늘 여름인 것 같은 이곳도 계절의 변화가 있다는 거예요. 시즌에 따라 달라지는 제철 재료를 활용해 요리에 계절감을 더하죠.” 그녀는 셰프로서 언제까지나 현장에서 열정적으로 활동하고 싶다. “여성으로서 후배들에게 굳건한 모습을 보여주고 싶어요. 좋은 기회가 온다면 오롯이 나의 색깔을 담은 요리를 선보이는 팀도 꾸리고 싶고요.”
